Preparation method
- Mix the Smedes Batter Mix with water
- Portion the fish, dip it in the batter and fry for 5 minutes
Regenerate or pre-bake
- Fry the fish a day in advance and let it cool thoroughly in a perforated container
- Regenerate the fish at 190°C with 5-10% steam for 6 minutes
- Fry the fries for 4 minutes at 180 degrees
